Taco Pizza
Growing up in Cedar Rapids, Iowa… this is my rendition of my hometown favorite from a popular local pizzeria! This childhood treasure is so yummy that even adults will love it!
Ingredients:
1 can Pillsbury thin crust pizza dough or buy dough at Trader Joe's
1 ½ cups re-fried beans and ½ cup sour cream, mix together
1 packet of taco seasoning (I like Taco Bell taco seasoning)
1 pound 90/10 ground beef
1 1/2 - 2 cups shredded sharp cheddar (I use Tillamook)
2-3 tablespoons red onion; finely chopped
2 cups shredded iceberg lettuce
3/4 cups diced ripe tomato
Taco flavored Doritos; crunched up (try your best to find “taco” flavored Doritos at Target or Walmart) - These Doritos can be difficult to find so you can also use crunchy taco shells, crunched up!
Optional Extras: a little more shredded cheddar, avocado, chopped, black olive slices, Tapatio, and cilantro... NOTE: these are not on the original, but may be tasty!
Top with the Taco Bell hot taco sauce
Directions:
Preheat oven to 400º
Unroll dough and press into a cookie sheet.
Bake the dough 5-7 minutes until just light golden... don’t bake too much!
In the meantime, mix the refried beans and the sour cream together.
Brown the ground beef, drain and add in the Taco Bell taco seasoning and a little water… and cook over low heat a few minutes.
Top the pre-baked crust with the bean and sour cream mixture, then the meat and onion mixture, then the cheddar cheese.
Bake another 5-10 minutes or until cheese is melted and crust is completely cooked.
Remove the pizza from the oven and let it cool for 5 minutes…
Top with the fresh, cool lettuce, tomatoes, more shredded cheddar cheese, crushed taco Doritos, sour cream, and taco sauce to your liking (Taco Bell hot sauce is my favorite!)
Optional Garnish: avocado, Tapatio, and cilantro… but they are not on the original taco pizza.
